I know people say you should use this kind of pellets for this and that kind for that. I guess i just dont have that sophisticated of taste buds. I just use a Hickory blend for everything.

if you buy good pellets, then you will notice on the longer cooks, pork shoulder with a good blend will go with any sauce/pairing vs shoulder with apple will suck up more of the sweet/tangy and starts getting you more focused. Nothing wrong with hickory or mesquite for solid smoke flavor, and also the hotter you cook, the less you taste any of the wood. The pellet grill thing can be as complicated as you want or as easy as you want.
That's 'cause you insist on working for yourself!
OTOH, I still have to trudge off for 8 hours or so a day.
I have a Pit Boss smoker so i use their pellets.
