Since I like a citrus flavor in my beer so much, I'm thinking of spicing up my next batch of pale for the summer. Maybe coriander, lemon, and orange peel? Just throw it in the secondary? How much?

I think you want to try to throw most of those in the boil for the last minute or so...maybe do a double addition, one at flameout and one in the secondary. I added 3/4 oz Coriander, 3/4 oz bitter orange peel, and the zest of a grapefruit into a wit I made a few months ago, added half of it all for 10 min, and half for 5 min, really don't get much of the flavor in the finished product at all, but it ended up pretty high octane so that may be hiding those flavors.

Get a grapefruit and zest the outer peel from the whole thing, and toss it into the boil for the last 5 mins. Also, grind some coriander and add that with the grapefruit zest. If you're feeling adventurous, drop in a couple star anise with the other stuff! Good luck.

I freq eat these salads at a Mediterranean place with Sumac on them... tastes really interesting.

I made a wit beer last year that I put ~1 teaspoon of coriander (ground with pestle and mortar) in, and it Killed my beer. It was way over coriandered!
If you are looking for spice, fruitiness, and a dose of creativity, maybe use a Belgian or Abbey Ale yeast rather than messin' with spices. For a lemonny flavor I like Centennial hops too . . .
