We don't drink alcohol so no desire to brew beer. However, we LOVE root beer. Anyone try brewing up their own? There seem to be quite a few "micro" brews out there.

There are brew your own root beer kits that I've heard are pretty good. Check out morebeer.com or northernbrewer.com. The biggest drawback is having to invest in a kegging setup to force carbonate it. (It can be done is bottles, but since fermentation is required to produce the carbonation, it becomes slightly alcoholic)

My mom used to make root beer when I was a kid...the best stuff ever. I will ask her about it tonight.

This is a work in progress of mine but I think it's about as good as it's going to get:
Rootbeer Recipe Makes 4 Gallons
1 Bottle Rainbow Flavors Rootbeer Extract
4 gals of Spring or RO water minus 4 cups
2 lb bag of Domino Dark Brown Sugar
7 Cups White Cane Sugar
1 Teaspoon Vanilla
4 Tablespoons Malto Dextrin(optional some times i use it sometimes i don't).
Heat up 1 - 2 gals of water just enough to dissolve Sugar and Malto Dextrin(make sure it's fully dissolved). Remove from heat add extract and vanilla and get every drop out of the bottle. Pour into keg and add the rest of the water stir and shake really good to get it mixed up. I let age for 2 -3 weeks. Give the keg a good shake every couple of days when you think about it. After 3 weeks are up i put it in fridge and hook up CO2 and carb for a week to 10 days at 10 psi. Drink and enjoy.
I've never bottled a batch myself but my readings on the topic of bottle carbing soda say use 1/4 tsp dry ale yeast per gallon of rootbeer. If you try it i'd definitely like to hear what you think!
