So I have kept about 500 photos on my memory card b/c I'm scrared to delete them from the source. I have them saved on my mac as JPGs. But I'm scared that if/when I go to print them, the quality will be lost. Plus I would also have to put them on a CD and take them somewhere. So I guess my question is, if I put them on a CD, will the quality be lesser (noticeably) than if I were to print them straight off of the memory card? Also when I chose to print a photo, it will be a larger size, 24x36 or so. If that makes a difference.

Go to Wolf Camera and let them help you out. I have not lost any quality with my printed photos by putting them on CD.

A photographer at my work recommended Yellow Dog Printing and Graphics. They're located on Sante Fe here and specialize in all sorts of large prints and different materials. So I'll be going there for my printing, but I just want to make sure it'll be the same quality prints whether I bring a CD or my memory card.

Just move the files directly from the storage card to the CD, that way you will keep the quality identical as the files will be identical just on a different medium.

As long as you don't open each one in an image editor, then do file | save as, your files will be fine when you copy them from the memory card to your hard drive, then to your cd or whatever else you are going to do.
All of my originals are fine when I upload them to flickr for archiving, or to walgreens.com for printing.
