View Full Version : Need a good batter recipe

Went down to JD's Baitshop down in Centenial quite a while ago and had their jalapeno bobbers. For those that haven't ever had them, they are just a jalapeno popper that is wrapped in bacon, breaded/battered, then deep fried. I wanted to try to make them, but need to figure out a good batter to use. I tried and it turned into something that resembled a loaf of bread wraped around soggy bacon.... it was disgusting.
So does anyone know a batter that might work for this recipe? Looking for something that will fry up light a flaky.

Beer and pancake mix is my batter of choice for fish. The baking powder in the pancake mix makes it light and fluffy. This might work for your application, and if the place you had these at was a fish joint, they may be using something similar.
Ohh, I was just thinking about this, you could roll them in the beer batter first then roll them in corn meal, that would be really good too, the corn & jalape?o would go really good together. Could try a hush puppy recipe or something like that as well, but that would probably be too heavy.

haha....... I can't wait for lunch. I'm just a bit hungry today, and have only been able to think about food all morning.
I'll have to give that pancake mix a try.

I'll experiment with some masa and the bacon/cheese jalape?os and see what I can figure out :D Sounds good.
Anything that is cheese filled, bacon wrapped, breaded, and deep fried can't be bad. That's like all four food groups!

I make mine similair and fill the peppers with cream cheese, Sundried tomatoes, Garlic and Basil(mixed well). Then wrap the peppers with bacon hold together with toothpicks then grill. I heard about these on Pirate and they are fantastic. Though your's sound great too.

I was going to try to make both when I make these. See which one I like more. That Pirate recipe looks tasty, but a bit time consuming.

You could also try deep frying them without breading till the bacon is at least somewhat crispy first, let them cool off a bit, pat off the grease, then bread them and deep fry to cook the breading. A bit more of a pain in the ass, but then you could use whatever breading you wanted.

While I like things deep fried, I've had the ones in the Pirate thread (Karstman here on the board makes them in his smoker when he BBQ's) and they're F'ing incredible.
Now you got me jonesin' for them. His recipe is called "Atomic Buffalo Turds" or something wack like that.
